Hey! Don’t put out that campfire just yet, summer isn’t quite over.
In my opinion, there’s nothing more enjoyable than driving up to the mountains and relaxing around the bonfire with some friends & family… with some appropriate treats of course. A staple summer recipe is S’mores; The trifecta of crunchy graham crackers, sweet chocolate and ooey-gooey toasted marshmallows send your taste buds flying. Nothing can beat the classic S’mores, but these recipes come pretty close! (In a totally unbiased opinion of course)
First up we have my personal favorite, S’mores Cookie Sammies. These special summer sandwiches are two for the price of one. Gooey marshmallows and melted chocolate sandwiched between two thick cookies; This is the same as making the classic S’mores, except we are replacing the two graham crackers with two cookies. I have prepared these with both Chocolate Chip Cookies and Peanut Butter Cookies. First, prepare your cookies as you normally would. I do suggest using a thicker cookie recipe, but almost any cookies will do. Once properly cooled, either package them up to bring to your campsite or proceed to creating your sammie. Select two cookies out of your batch and place your first cookie to the side, as you will be needing it shortly. Take your second cookie and lay it down with the flat part (the bottom) facing up. Now layer the flat part with one piece, or three pieces, of milk chocolate and begin toasting your marshmallow. Once toasted to your level of perfection, place the marshmallow on the chocolate and grab your first cookie. With your first cookie having it’s flat part facing down, squish your stack of sweets together and remove the stick you used to toast your marshmallow. Ooey-gooey marshmallow and melted chocolate sandwiched between two sweet chocolate chip cookies… WOW!
