Hey! Don’t put out that campfire just yet, summer isn’t quite over.

In my opinion, there’s nothing more enjoyable than driving up to the mountains and relaxing around the bonfire with some friends & family… with some appropriate treats of course. A staple summer recipe is S’mores; The trifecta of crunchy graham crackers, sweet chocolate and ooey-gooey toasted marshmallows send your taste buds flying. Nothing can beat the classic S’mores, but these recipes come pretty close! (In a totally unbiased opinion of course)

S’mores Sammies:

First up we have my personal favorite, S’mores Cookie Sammies. These special summer sandwiches are two for the price of one. Gooey marshmallows and melted chocolate sandwiched between two thick cookies; This is the same as making the classic S’mores, except we are replacing the two graham crackers with two cookies. I have prepared these with both Chocolate Chip Cookies and Peanut Butter Cookies. First, prepare your cookies as you normally would. I do suggest using a thicker cookie recipe, but almost any cookies will do. Once properly cooled, either package them up to bring to your campsite or proceed to creating your sammie. Select two cookies out of your batch and place your first cookie to the side, as you will be needing it shortly. Take your second cookie and lay it down with the flat part (the bottom) facing up. Now layer the flat part with one piece, or three pieces, of milk chocolate and begin toasting your marshmallow. Once toasted to your level of perfection, place the marshmallow on the chocolate and grab your first cookie. With your first cookie having it’s flat part facing down, squish your stack of sweets together and remove the stick you used to toast your marshmallow. Ooey-gooey marshmallow and melted chocolate sandwiched between two sweet chocolate chip cookies… WOW!

Spiced Up S'mores:

My perfect s'mores includes a perfectly toasted marshmallow- that cappuccino colored coating, when the inside is nice and goopy- UGH PERFECTION! Warm enough to melt your chocolate, but not hot enough to burn your mouth, totally kid approved!!

Now lets talk about spicing up (actually sweetening up) your s'mores! Let's add fun layers of fruit, spreads, and other tasty additions that any kid .. or adult, will approve of. First I have selected chocolate graham crackers, as opposed to the typical honey flavor. Any graham crackers you select will do the trick. First select one of graham cracker from the box and break it in half along the dotted lines. Take one half and slather it with chunky peanut butter and layer with sliced bananas. Now take your second half of the graham cracker and slather that side with creamy hazelnut spread and add sliced strawberries. Once your s’mores is prepared, begin toasting your marshmallow. Once toasted, sandwich your marshmallow between your two prepared graham crackers and enjoy your delicious creation! MMM GOOD.

S’mores are by far the best flavor summertime can offer. They are typically paired with bonfires, good times with family & friends and great weather.. who can argue with any of those things? As summer slowly comes to a close, we have to savor every last memory... and bite that this summer has to offer us. So before you pack those school lunches, briefcases and put your weekender bags away, make sure you have one last "summer night" and make some lasting memories.
